Ingredients

  • 1 lb. red beans
  • 1/2 lb. bacon slices, cut up
  • 1 onion, chopped
  • 1/3 c. ketchup
  • 1/3 c. molasses
  • 2 tsp. salt
  • 1/3 tsp. pepper
  • 1/2 tsp. dry mustard

Directions

    Soak red beans overnight.

    Simmer in same water until tender, 2 to 3 hours.

    Drain and save water.

    Place in layers:

    beans, bacon and onions.

    Combine ketchup, molasses, salt, pepper and dry mustard.

    Pour over beans.

    Add enough water to cover pot and bake.

    The last half of baking time, uncover pot.

    Add a little water if beans seem dry while baking.

    Bake at 325° for 4 to 5 hours.
