  • 1 lb. pea beans
  • 1/2 lb. lean salt pork
  • 3/4 c. white sugar
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions

    Wash beans and soak overnight.

    Rinse beans again and place in a baking dish, covering with water.

    Stir in sugar, salt and pepper.

    Cut salt pork into 4 pieces and place on top of beans. Bake beans at 350°

    for approximately 4 hours.

    Check beans periodically, stirring and adding water as needed.
