  • beans
  • 1 1/2 tsp. soda
  • 3/4 c. sugar per lb. beans
  • diced ham or bacon
  • 1/4 c. molasses
  • diced onion
  • 1/2 tsp. ginger
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

    Soak beans overnight.

    Sprinkle the soda over beans.

    Boil for 10 minutes, skimming off foam.

    Drain 1/2 water off; cover with warm water.

    Add 3/4 cup sugar per pound of beans.

    Add diced ham or bacon, the molasses, diced onion, ginger, salt and pepper. Bake at 300° for 8 hours, or use slow cooker.
