Ingredients

  • 2 c. navy beans
  • 1 1/2 tsp. salt
  • 1/2 c. granulated or brown sugar
  • 2 Tbsp. molasses (more or less)
  • 1/2 tsp. mustard
  • 2 Tbsp. catsup (if desired)
  • 1 small onion (if desired)

Directions

    Wash beans;

    cover with

    2 quarts water and soak overnight. Cook slowly until tender.

    Drain.

    Place half the beans in an earthenware pot or casserole.

    Add half of the combined remaining ingredients, adding 1 cup ham broth or chunks of ham.

    Add remaining beans and seasonings.

    Cover with bean broth or boiling water.

    Cover and bake in slow oven at 225° to 300° at least 2 hours.

    When necessary, add water.

    One half can or one cup diced tomatoes may be used instead of catsup.
