Ingredients

  • 4 c. peas or yellow eye beans
  • 1 c. chopped onions
  • 1/4 lb. salt pork, diced
  • 1/2 to 3/4 c. brown sugar
  • 1/2 c. or more catsup
  • 2 Tbsp. dry mustard
  • 2 tsp. salt
  • 4 Tbsp. A.1. or Worcestershire sauce
  • 2 or more c. boiling water

Directions

    Cover beans with water and let soak overnight.

    Drain and cover with water and simmer them long and slowly.

    Place a few beans in a spoon and blow on them.

    If the skins burst, they are sufficiently cooked.

    Drain and add ingredients.

    Put in crock-pot 6 to 8 hours on high.

    If in oven, bake at 250°.
