- 3 c. finely shredded cheese
- 2 c. coarse dry bread crumbs (preferably French bread)
- 1 1/4 c. grated Cheddar cheese
- 2 eggs
- 1 tsp. salt
- 1 tsp. prepared mustard
- 1/8 tsp. pepper
- 2 c. milk
- 1 Tbsp. chopped pimiento
Directions

1Cover cabbage with cold water and heat to boiling.

2Drain well.

3In buttered, shallow 2-quart baking dish, arrange cabbage, crumbs and cheese in layers, making 2 layers of each.

4Beat eggs with salt, mustard and pepper.

5Add milk and pimiento and mix well.

6Pour over cabbage, pressing mixture down into the liquid. Let stand 20 minutes.

7Bake in moderate oven (350°) about 45 minutes, until puffed and set in center of dish.

8Yield: 6 to 8 servings.
