Baked Caramel Corn

Ingredients
- 1 c. butter
- 2 c. firmly packed brown sugar
- 1/2 c. light corn syrup
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. vanilla
- 4 to 6 qt. popped corn (I use 3 to 4 pkg. microwave popcorn)
- 1 jar dry roasted peanuts
Directions

1Melt butter and stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly.

2Boil without stirring for 5 minutes.

3Remove from heat and stir in soda and vanilla. Gradually pour over popcorn and nuts.

4Mix well.

5Pour into baking pans.

6Bake in a 250° oven for 1 hour, stirring every 15 minutes. Break apart.
