Baked Caramel Corn

Ingredients

  • 1 c. butter
  • 2 c. firmly packed brown sugar
  • 1/2 c. light corn syrup
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 tsp. vanilla
  • 4 to 6 qt. popped corn (I use 3 to 4 pkg. microwave popcorn)
  • 1 jar dry roasted peanuts

Directions

    Melt butter and stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly.

    Boil without stirring for 5 minutes.

    Remove from heat and stir in soda and vanilla. Gradually pour over popcorn and nuts.

    Mix well.

    Pour into baking pans.

    Bake in a 250° oven for 1 hour, stirring every 15 minutes. Break apart.
