Baked Celery

- 3 c. diced celery
- 1/2 c. boiling water
- milk
- 1 Tbsp. butter or margarine
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1/4 c. chopped almonds
- 1 (9 oz.) can chow mein noodles
Directions

1Cook celery in saucepan for 10 minutes.

2Drain liquid in measuring cup and add milk to make 1 cup.

3Make a thin cream sauce by melting the butter, stirring in the flour, then blending in the celery liquid and milk.

4Cook, stirring until thickened and smooth.

5Add the salt.

6Place half the cooked celery in a buttered 2-quart casserole.

7Sprinkle with half the almonds and half the noodles.

8Add remainder of the celery, almonds and noodles.

9Pour the sauce over all.

10Sprinkle with paprika and bake at 375° for 20 minutes.

11Serves 6.
