- 3 to 4 lb. whole chicken, washed and cleaned
- 2 Tbsp. butter, melted
- 1 to 2 small onions
- salt
- pepper
- oregano
- carrots
- potatoes
Directions

1Wash and clean chicken.

2Place in baking pan.

3Pour butter over chicken.

4Season with salt, pepper and oregano to taste. Place 1 small onion in cavity of chicken.

5Peel and quarter potatoes; peel and cut carrots in half.

6Place around chicken. Cut or slice second onion and place over potatoes and carrots. Cover with foil and bake in 350° oven for 1 1/2 hours.

7Fifteen minutes before done, remove foil to brown chicken.
