  • 3 to 5 lb. whole chicken
  • 1 small onion, chopped
  • 2 stalks celery, chopped
  • salt and pepper

    Wash and dry chicken.

    Rub all over with salt and pepper.

    Put celery and onion in the cavity; cover and bake at 325° for 2 hours. Uncover and bake at 400° for 15 minutes to brown chicken.

    Chicken is done when the leg bone moves easily.

    Transfer all stock in the bottom of the dish to a saucepan and add 1 to 1 1/2 cups water. Add the onion and celery from the cavity and mix well.
