- 3 to 5 lb. whole chicken
- 1 small onion, chopped
- 2 stalks celery, chopped
- salt and pepper

1Wash and dry chicken.

2Rub all over with salt and pepper.

3Put celery and onion in the cavity; cover and bake at 325° for 2 hours. Uncover and bake at 400° for 15 minutes to brown chicken.

4Chicken is done when the leg bone moves easily.

5Transfer all stock in the bottom of the dish to a saucepan and add 1 to 1 1/2 cups water. Add the onion and celery from the cavity and mix well.
