- 1 tablespoon olive oil
- 1 lb cod, filets
- 1 tablespoon Dijon mustard
- 12 cup crushed corn flakes
- 1 tablespoon melted butter
Directions

1Preheat oven to 400 degrees F. Drizzle olive oil over a baking sheet.

2Brush mustard over cod fillets.

3Stir together cornflake crumbs and melted butter.

4Sprinkle over cod fillets, pressing lightly with your fingers to make sure the crumbs adhere.

5Place on prepared baking sheet.

6Bake 15-20 minutes, until fish is opaque throughout and flakes easily with a fork.

7The baking time will depend on how thick the fillets are.

8Check at 15 minutes.

9If not done, continue baking, checking every 2 minutes until done.
