Baked Cod in Parchment Parcels

  • 3 green onions, coarsely chopped
  • 1/4 cup chopped preserved vegetables
  • 1 Tbsp. reduced-sodium soy sauce

  • 1 cup shiitake mushrooms, stemmed, thinly sliced
  • 1 Tbsp. dried goji berries, hydrated
  • 1/4 cup Kraft Sweet Onion Vinaigrette Dressing
  • 4-1/2 tsp. minced gingerroot
  • 1/4 tsp. ground black pepper

    Heat oven to 500 degrees F.

    Use pulsing action to process first 4 ingredients in food processor until coarsely chopped.

    Reserve 1/4 cup vegetable mixture.

    Spoon remaining over fish in shallow dish; turn to evenly coat both sides of each piece.

    Let stand 10 min.

    Place 1 fish piece on each of 4 large sheets parchment paper; top with reserved vegetable mixture, mushrooms and berries.

    Fold top and ends of each parchment sheet to make parcel; place in single layer on rimmed baking sheet.
