Ingredients

  • 1/4 c. diced mango pepper
  • 2 Tbsp. shortening
  • 1/2 c. condensed milk
  • 1 1/2 c. whole kernel corn, drained and liquid reserved
  • 1/2 tsp. salt
  • dash of pepper
  • 1/3 c. cheese (Velveeta or American)
  • 2 eggs, separated
  • 1 1/3 c. soft bread cubes

Directions

    Fry mango in shortening. Add milk, 1/2 cup corn liquid, seasonings and cheese.

    Heat until cheese melts. Add slightly beaten egg yolks, bread cubes and corn. Beat egg whites stiff. Fold in.

    Pour into greased 1 1/2-quart baking dish. Bake at 350° for 45 minutes or until firm in center. Serves 8.
