- 2 tsp. flour
- 2 Tbsp. sugar
- 4 Tbsp. milk
- 1 tsp. salt
Directions

1Cut eggplant in slices 1/2-inch thick and lay in salt water for 1 hour.

2Drain and dip in beaten egg, then in cornmeal, cracker crumbs or flour.

3Fry until brown and nicely tender.
