Ingredients
- 2 (10 oz.) pkg. thawed, drained frozen corn
- 3 eggs
- 1 tsp. grated onion
- 1/4 c. flour
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. sugar
- dash of nutmeg
- 2 Tbsp. melted margarine or butter
- 2 c. light cream
- 1 can pimientos, chopped
Directions

1Preheat oven to 325°.

2Grease a 1 1/2-quart shallow baking dish.

3In large bowl, mix corn, eggs and onion well.

4Combine flour, salt, pepper, sugar and nutmeg.

5Stir into corn mixture. Add butter or margarine and pimientos.

6Mix well.

7Pour into dish.

8Set dish in pan.

9Pour hot water to 1-inch around dish. Bake, uncovered, 1 hour or until pudding is firm and knife comes out clean.

10Makes 8 servings.
