- 1 (4 to 5 lb.) duck
- 1 c. unsweetened pineapple juice
- 1/2 c. flat beer
- 1/3 c. honey
Directions

1Tie legs of duck together.

2Pierce duck all over in fat areas around thighs and legs.

3Place on rack of roasting pan.

4Bake at 375° for 1 1/2 hours.

5Baste every 30 minutes with honey glaze. Remove fat from pan as it bakes with a bulb baster, before each basting of ducks.

6Ducks are done when legs move easily and juice is clear when skin is pricked.
