- 5 lb. potatoes, peeled and wedged
- 4 carrots, sliced
- 1/4 c. parsley
- 6 garlic cloves, minced
- 1 Tbsp. salt
- 1/2 tsp. black crushed pepper
- 1/4 c. olive oil
- 1/2 c. bread crumbs (unseasoned)
- 1/4 c. Parmesan cheese
Directions

1In large baking or roasting pan, combine all ingredients well. Cover with aluminum foil.

2Bake at 400° for 1 hour.

3Garnish with fresh mint leaves.
