- 1 eggplant
- 1/4 c. butter
- 1/2 c. bread crumbs
- 1 tsp. minced onion
- 2 eggs
- salt and pepper
Directions

1Pare eggplant; cut in cubes.

2Cook in salted water until tender.

4Add crumbs, onion, butter, salt and pepper.

5Drain eggplant; mix all together.

6Pour into buttered dish.
