  • 1 eggplant
  • 1/4 c. butter
  • 1/2 c. bread crumbs
  • 1 tsp. minced onion
  • 2 eggs
  • salt and pepper

Directions

    Pare eggplant; cut in cubes.

    Cook in salted water until tender.

    Mix eggs together.

    Add crumbs, onion, butter, salt and pepper.
