- 1 medium-size eggplant
- 1 c. cracker crumbs
- 3 strips bacon
- 3 eggs
- salt and pepper
- 2 Tbsp. butter or margarine
Directions

1Peel, dice and boil eggplant until tender.

2Drain; mash slightly with a fork or potato masher.

3Add seasonings to taste, eggs, butter and crumbs.

4Mix well and pour into generously greased casserole dish.

5Lay bacon strips on top.

6Bake in a 300° oven for 35 minutes, or until lightly browned on top.
