- 1 eggplant
- 1 c. cracker crumbs
- 2 eggs, beaten
- 1 can cream of mushroom soup
- 1 large onion, diced
- 1/3 c. butter
Directions

1Peel eggplant and dice into 1-inch cubes.

2Cook in salt water until very tender.

3Brown onion in butter.

4Mix all ingredients together.

5Pour into greased baking dish.

6Bake in slow oven about 30 to 40 minutes.
