  • 1 eggplant, peeled and sliced
  • 1 c. flour
  • 5 eggs
  • dash of salt
  • dash of pepper
  • 1 c. milk

    Beat eggs and milk together.

    Dip eggplant in egg mixture and then in flour. Salt and pepper to taste.
