- 3 to 4 good size eggplant
- tomato sauce
- Mozzarella cheese, shredded
- 2 to 3 eggs
- bread crumbs
- 1 tsp. milk
Directions

1Preheat oven to 350°.

2Slice eggplant thin.

3Mix egg with a little milk.

4Dip eggplant into egg mixture, then into bread crumbs.

5Fry both sides for approximately 3 minutes total.

6Then put into a greased casserole dish.

7Cover with sauce and top with shredded Mozzarella cheese.

8Bake 1/2 to 1 hour, just until heated through.
