- 1 eggplant, peeled
- 1 egg, beaten
- 1 c. potato flakes
- salt and pepper
- 1/2 lb. margarine, melted
Directions

1Peel eggplant and slice 3/4-inch thick.

2Beat egg with salt and pepper.

3Dip eggplant in egg and then in potato flakes.

4Place in pan that has been coated with margarine.

5Pour rest of margarine over top.

6Bake at 450° for about 15 to 20 minutes, turning once.
