Baked Eggplant

  • 1 eggplant, peeled
  • 1 egg, beaten
  • 1 c. potato flakes
  • salt and pepper
  • 1/2 lb. margarine, melted

Directions

    Peel eggplant and slice 3/4-inch thick.

    Beat egg with salt and pepper.

    Dip eggplant in egg and then in potato flakes.

    Place in pan that has been coated with margarine.

    Pour rest of margarine over top.

    Bake at 450° for about 15 to 20 minutes, turning once.
