  • eggplant, peeled and sliced 1/2-inch
  • 1 egg, beaten
  • salt, pepper and onion salt to taste
  • Pepperidge Farm bread crumbs

Directions

    Combine the egg, salt, pepper and onion.

    Dip eggplant in egg mixture, then roll in Pepperidge Farm bread crumbs.

    Put on greased pan.

    Put 1/2 teaspoon butter on top of each slice.

    Broil until golden brown.

    Turn over, add butter, bake 10 minutes at 400°.
