  • mayonnaise

Directions

    Put 2 tablespoons cooking oil in baking pan and place in a 400° oven to heat.

    Peel and slice eggplant into 3/4-inch slices.

    Soak in salted water 15 minutes; drain.

    Spread each side with mayonnaise and bread with seasoned bread crumbs.
