- 1 eggplant
- 1/4 stick butter or bacon drippings
- 1 c. cracker crumbs
- 2/3 c. milk
- pinch of salt (1/8)
- 1 c. sharp cheese
- 2 Tbsp. flour
- 1 c. tomatoes
- 2 eggs, separated
Directions

1Peel and dice eggplant.

2Cook in a little water until tender over low heat.

3Make a cream sauce with butter or drippings, flour and milk.

4Add cheese and melt over low heat.

5Drain eggplant and mash it.

6Add cracker crumbs, tomatoes, beaten egg yolks and salt. Mix together with the cream sauce and fold in egg whites and bake at 350° for 30 minutes.

7Serves 6.
