- 1 medium eggplant
- 1/2 lb. ground beef
- 1/2 c. minced onion
- 1/2 tsp. pepper
- 1 tsp. salt
- 2 c. cooked rice
- 5 Tbsp. margarine
- 1/4 c. chopped green pepper
- 1/2 c. bread crumbs
Directions

1Peel eggplant and cut into cubes.

2Cook in boiling, salted water until tender (15 to 20 minutes).

3Drain; mash with fork. Brown meat in 3 tablespoons margarine.

4Add onion and pepper and cook until tender.

5Stir in eggplant, rice, salt and pepper. Spoon into a 10 x 6 x 2-inch baking dish.

6Saute bread crumbs in remaining 2 tablespoons margarine.

7Sprinkle over eggplant mixture.

8Bake at 375° for 20 minutes.

9Makes 4 to 6 servings.
