- 2 eggplant
- 1 onion (medium), chopped
- 2 stalks celery, chopped
- 1 tomato, chopped
- 1 c. small shrimp
- seasoned bread crumbs
Directions

1Peel, dice and parboil eggplant.

2Saute onion, celery and shrimp in olive oil.

3Add tomato and cook.

4Season with salt, pepper, a dash of Tabasco sauce, a dash of Worcestershire sauce and 1 bay leaf. When all are blended together, fold in the eggplant.

5Place in baking dish. Top with seasoned bread crumbs. Bake at 350° for about 20 to 25 minutes.
