Baked Eggplant Appetizer

- 1 large eggplant
- olive oil
- 1 large onion, peeled and quartered
- 3 cloves unpeeled garlic
- 1 red bell pepper, halved and seeded
- 1 tsp. chopped oregano
- 1 tsp. olive oil
- 1/8 tsp. pepper
- 4 oz. Feta cheese, crumbled
- 2 Tbsp. chopped parsley
- 2 tsp. lemon juice
- 1/8 tsp. salt
Directions

1Halve eggplant lengthwise.

2Brush all sides with olive oil. Place halves, cut side down, on a baking sheet.

3Bake 25 minutes. Brush onion, garlic and red pepper with oil and add to eggplant. Bake 25 to 30 minutes longer or until vegetables are tender.
