Baked Empanada

Ingredients

  • 2 c. all purpose flour
  • 3 Tbsp. sugar
  • 1/2 c. margarine
  • 2 Tbsp. water
  • 1 egg
  • mixture of 1 egg yolk + 2 Tbsp. milk for brushing top

Directions

    Sift flour, salt and sugar in a bowl.

    Cut in margarine using a pastry blender or dough cutter.
  3. 3
    Add water and one egg. Blend until smooth.
  4. 4
    Form into a ball and knead for a few minutes. Roll out on a floured board until you reach the desired thickness. Cut into rounds or squares and place a spoonful of filling (see below) in the middle.

    Fold pastry and seal with the tine of a fork. Using the fork, prick the empanada twice on top.

    Brush the tops with the egg yolk and milk mixture.

    Place on a greased pan with oil and dusted with flour (or use a teflon baking pan) and bake for 30-45 minutes at 325° or until golden brown.
