Ingredients

  • 2 lb. fillet of sole
  • 1/2 c. olive oil
  • 1 can tomato slices (16 oz.)
  • 3 chopped scallions
  • 1 c. chopped parsley
  • 1 minced garlic clove
  • 2 tsp. oregano
  • salt and pepper
  • 1 c. water
  • butter
  • bread crumbs
  • lemon slices (optional)
  • 2 large onions, sliced in rings (optional)
  • 1/2 can sliced black olives (optional)

Directions

    Place fish in single layer in greased pan (use olive oil). Sprinkle with salt, pepper and oregano.

    Add 1/2 cup olive oil. Add tomatoes, scallions, parsley and garlic.

    Top with bread crumbs, covering fish completely.

    Dot with butter.

    Add 1 cup water and bake at 350° for 45 minutes.

    Decorate with onion rings, olives and lemon.
