Ingredients

  • 1 3/4 lb. fish (any solid flesh)
  • salt and pepper
  • 1/2 c. oil
  • 2 to 3 whole tomatoes, chopped
  • 2 ribs celery
  • 1 large onion, sliced
  • garlic
  • 4 to 5 potatoes, sliced
  • juice of 1/2 lemon

    Wash fish, add salt and pepper and rub with lemon juice.

    Saute onion, add tomatoes, garlic and celery.

    Simmer.

    Blend well.

    Add potatoes and simmer for 10 minutes more.

    Lightly oil baking pan. Place fish in pan and pour tomato-potato mixture over fish.

    Add 1/2 cup water and cover.

    Bake at 350° for 1 hour.
