  • 1/3 cup KRAFT FREE* Thai Lime & Coriander Dressing
  • 1 tablespoon sweet chilli sauce
  • 2 teaspoons fish sauce Walmart Supercenter 1 lb For $5.00 thru 02/14
  • 2 teaspoons brown sugar
  • 600g firm boneless white fish fillets King Sooper's 1 lb For $7.99 thru 02/09
  • 1 carrot, finely shredded Target 2 lb For $3.00 thru 02/06
  • 100g snow peas, finely shredded
  • 1 red onion, finely sliced
  • 1 cup shredded red cabbage
  • 1/4 cup raw cashews, lightly toasted
  • 1/4 cup mint leaves, roughly chopped
  • fresh coriander sprigs, to serve
  • 2 cups steamed basmati rice, to serve

Directions

    Combine dressing, fish sauce and brown sugar.

    Pour over fish that is in a single layer in an ovenproof baking dish.

    Cover with foil and bake at 180 degrees C for 20 minutes until fish is tender and flakes easily when pressed with a fork.

    Serve over combined shredded vegetables, nuts and mint.

    Drizzle with any pan juices.

    Serve immediately garnished with fresh coriander sprigs and steamed rice.
