- 1 cup whole wheat panko
- 1 cup whole grain cereal (like Wheaties)
- 1 teaspoon lemon pepper
- 12 teaspoon granulated garlic
- 12 teaspoon paprika
- 14 teaspoon salt
- 12 cup all-purpose flour
- 2 large egg whites, beaten
- 16 ounces cod, cut into 1/2-inch x 3-inch strips
Directions

1Preheat oven to 450.

2Place a wire rack on a baking sheet and coat with nonstick spray.

3In a food processor, add breadcrumbs, cereal, lemon pepper, garlic powder, paprika and salt - process until finely ground.

4More mixture into a shallow dish.

5Place flour in another shallow dish and add the egg whites to a third dish.

6Dredge each strip of fish in the flour, then into the egg and finally coat all sides with the breadcrumb mixture.

7Place on the rack and then coat each side of the breaded fish with a spray of olive oil or cooking spray.

8Bake until the fish is cooked through and the breading is golden brown, about 8-10 minutes.
