Baked Fruit Compote

  • 1 large can pears
  • 1 large can peaches
  • 1 (No. 3) can pitted dark cherries
  • 1 (No. 3) can peeled apricots
  • 1 c. brown sugar
  • 1/2 c. rum

Directions

    Drain all fruit, reserving 1/2 cup apricot juice.

    Pour fruit into casserole dish.

    Lay 2 large fresh strawberries on top. Sprinkle 1 cup brown sugar on top of fruit.

    Mix 1/2 cup apricot juice with 1/2 cup rum and pour over fruit.

    Bake at 350° for 35 minutes.

    Serve warm.

    (You may mix ingredients together the night before and bake the following day.)
