- 1 lb. haddock fillets
- 1/4 c. plus 2 Tbsp. dried bread crumbs
- 1 Tbsp. minced herbs (thyme and tarragon)
- 1/4 tsp. pepper
- 1 Tbsp. plus 1 tsp. margarine, melted
- 4 lemon wedges
- 1/4 tsp. salt
- 1 large egg
- 1 tsp. paprika
Directions

1Preheat oven to 375°.

2Spray 13 x 9-inch baking pan with nonstick spray.

3On wax paper, combine crumbs, herbs, salt and pepper.

4In shallow plate, beat egg with 1 teaspoon of water.

5Dip fillets in egg, then in crumbs, using all of each.

6Place fillets in prepared pan.

7Pour melted margarine evenly over fillets.

8Bake for 30 minutes or until fish flakes easily.

9Sprinkle with paprika.

10Serve with lemon wedges.
