- 1 lb ground beef
- 1 medium onion (grated)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup parsley (finely chopped)
- 1/4 cup vegetable oil (for frying)
- 2 zucchini, 6-8 inces long (sliced)
- 2 medium potatoes (sliced)
- 2 medium carrots (sliced)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon cinnamon
- 1/4 cup tomato paste
- 3 cups water
Directions

1Set oven at 375.

2Combine meat, onion, 1 tsp. salt, pepper and parsley.

3Mix well.

4Form into 1 1/2 inch balls then flatten into patties and fry slightly in a skillet with the oil, turning over once, (do not cook through).

5Remove from skillet and place in a baking or casserole dish.

6Combine remaining ingredients and add to meat patties.

7Stir gently.

8Bake for 45-60 minutes or until carrots are tender.

9Serve with rice pilaf.
