  • 3 tablespoons natural grapeseed oil
  • 2 bell peppers, diced
  • 1 yellow onion, diced
  • 28 ounces peeled plum tomatoes
  • 2 tablespoons mediterranean seasoning (Wildtree Mediterranean Dry Rub)
  • 2 tablespoons dried garlic (Wildtree)
  • 1 eggplant (cubed)
  • 2 zucchini (cubed)
  • 1 tablespoon hearty spaghetti blend seasoning (Wildtree Hearty Spaghetti Blend)

Directions

    In large sauce pot heat 1 Tb GRAPESEED OIL, add bell pepper and onion, cook until tender.

    Remove seeds from canned tomatoes, dice and add along with juice from can.

    Season with the Mediterranean rub and 1 Tb of Garlic Galore.

    Cook for 30 minutes.

    In a separate pan, heat the remaining GRAPESEED OIL , add the eggplant, zucchini, remaining 1 Tb Garlic Galore and Hearty Spaghetti blend.

    Stir, saute 10 minutes.

    Add to first pot AFTER the 30 minutes have passed.

    Stir, cover and cook until eggplant is tender.
