- 1 c. sugar
- 1/2 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3 eggs, separated
- 2 tsp. grated lemon rind
- 1/4 c. lemon juice
- 2 Tbsp. melted butter
- 1 1/2 c. milk
Directions

1Sift together the sugar, flour, baking powder and salt.

2Set aside.

3Beat 3 egg whites in a separate bowl until stiff.

4Beat in 1/2 cup sugar, 1 teaspoon at a time.

5Set aside.

6In another bowl, without washing the beaters, beat yolks until light.

7Add the lemon rind and juice, melted butter and milk.

8Stir into the flour mixture.

9Beat until smooth.

10Gently fold in beaten egg whites. Pour into a buttered 2-quart baking dish.

11Set in pan of hot water 1/2-inch deep.

12Bake 45 minutes at 350°.

13Chill at least 1 hour.
