Baked Limas

  • 2 c. dried lima beans
  • 1 1/2 qt. water
  • 1 tsp. salt
  • pinch of sugar
  • 2 Tbsp. Schmaltz or butter
  • 1/2 c. tomato catsup

    Bring limas to a boil in water.

    Add salt and sugar.

    Reduce heat and cook slowly until limas are very tender (about 1 1/2 hours).

    Drain beans.

    Place in 2-quart casserole.

    Stir in butter and catsup.
  7. 7
    Bake at 350° until limas are delicately browned and crusty on top (about 1 hour).

    Serves 6 to 8.
