  • 12 lb elbow macaroni
  • 2 eggs
  • 6 ounces evaporated milk
  • 12 teaspoon hot sauce
  • 1 teaspoon kosher salt
  • black pepper
  • nutmeg
  • garlic powder
  • paprika
  • dry mustard
  • 12 cup feta cheese, crumbles
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup gouda cheese, shredded

Directions

    In a large pot of boiling, salted water cook the pasta to al dente and drain.

    Return to the pot and melt in the butter.

    Toss to coat.

    Whisk together the eggs, milk, hot sauce, and spices.

    Stir into the pasta and add the cheese.

    Over low heat continue to stir for 3 minutes or until creamy.

    add to baking dish and top with shredded cheddar.

    top with buttered bread crumbs and bake at 350 for 30 minutes.
