- 6 whole mackerel fillets
- 1/4 c. white vinegar
- 3/4 c. water
- 1 onion, sliced
- 2 tsp. salt
- 6 whole peppercorns
- 1 Tbsp. pickling spice
- dash of cayenne pepper
- 1 whole bay leaf
- 6 whole cloves
Directions

1Place fillets in one layer in a glass or ceramic baking dish. Heat vinegar, water, onion, herbs and spices.

2Pour over fish. Allow to marinate for at least one hour.

3Bake, covered, for 45 minutes at 375°.
