Baked Mandarins

- 8 mandarins
- butter
- 1/2 mandarin juice or 1/4 c. sherry
- sugar
- 1 tsp. arrowroot
Directions

1Soak mandarins in cold water for 2 hours.

2Neatly, cut off top about 1/4 down.

3Loosen peel and fruit, fill all spaces with sugar, top with 1/8 teaspoon butter.

4Place mandarins in baking dish filled with water to approximately 1/4-inch up side of the mandarin.

5Cover with aluminum foil, bake at 325° for 30 minutes. Be sure to keep the bottom of the baking dish covered with water. Remove mandarins from pan, thicken pan juices with arrowroot, flavor with juice or sherry.

6Put mandarins under broiler to brown top slightly.

7Serve with hot syrup.
