- 1 box mochiko
- 2 c. sugar
- 1 tsp. vanilla
- 1 tsp. baking powder
- 1 (12 oz.) can coconut milk
- 2 c. water
- food coloring (optional)
- katakuri (potato starch)
Directions

1Mix dry ingredients, except potato starch.

2Add water and coconut milk gradually until well mixed.

3Add vanilla and coloring and pour into greased 9 x 13-inch pan.

4Cover with foil and bake in 350° oven for 1 hour.

5Do not underbake.

6In fact, overbake. Cool completely.

7Cut into smaller pieces and roll in potato starch.
