- 3 Tbsp. butter
- 1 large onion, minced
- 1 rib celery, minced
- cooked shrimp, can of deviled ham or diced ham
- 1 (No. 2) can tomatoes
- 1 tsp. minced parsley
- 1 1/2 c. bread crumbs
Directions

1Melt butter in iron skillet with onion and celery and cook over low heat until onions are clear.

2Add tomatoes and bring to a boil, about 2 minutes.

3Add bread crumbs (saving some for top) and stir well.

4Add parsley and meat, if desired.

5Turn into a 1-quart casserole and dot with butter and slices of bacon.

6Sprinkle top with bread crumbs.

7Bake at 350° until the top is brown.

8Serves 4.
