- 1 (20 oz.) can crushed pineapple
- 3 Tbsp. cornstarch
- 1/2 c. sugar
- 3 eggs, slightly beaten
- 1 tsp. cinnamon
- 2 Tbsp. butter
Directions

1Butter a 1-quart casserole dish.

2Drain juice from pineapple and mix cornstarch with this juice, stirring until no lumps appear in the mixture.

3Add the eggs, sugar, the pineapple and 1/2 teaspoon cinnamon, mixing well.

4Pour the mixture into the casserole.

5Sprinkle the remaining 1/2 teaspoon of cinnamon on top. Put little pats of butter on top of the whole thing.

6Bake at 350° for 1 hour.

7Serve hot or cold.
