Baked Pineapple Rice

- 2 c. rice
- 4 c. crushed pineapple
- 11 Tbsp. butter
- 1 1/2 c. brown sugar
- 1 1/2 c. pineapple juice
Directions

1Boil the rice.

2Drain the crushed pineapple.

3Place in a buttered baking dish 1/4 of the rice; cover with 1/2 of the pineapple.

4Repeat the layer.

5Place last of rice on top.

6Dot each layer with butter and brown sugar.

7Pour pineapple juice over top and bake covered for 1 hour, or until brown, at 350°.
