  • 4 large Idaho potatoes, baked
  • 2/3 c. milk
  • 1/4 c. oleo
  • salt and pepper to taste
  • 3/4 c. shredded cheese
  • dash of paprika

Directions

    Cut hot baked potatoes in half, lengthwise, and scoop out insides.

    With an electric mixer beat oleo and potatoes until creamy, gradually add the milk; mixing well.

    Add salt and pepper; stir.

    Spoon mixture back into the potato shells.

    Sprinkle with shredded cheese.

    Arrange in baking dish.

    Bake at 375° until heated through and cheese is melted.
