Baked Pumpkin Pie

Ingredients

  • unbaked low-fat pie crust in 10-inch pie pan
  • 2/3 c. packed brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1 1/2 c. canned pumpkin
  • 1 1/2 c. skim milk
  • 1/4 c. plus 1 Tbsp. dry milk
  • 3 egg whites, beaten until foamy

Directions

    Mix all filling ingredients except milk, dry milk and egg whites.

    Add remaining ingredients.

    Beat until thoroughly mixed. Pour into pie crust.

    Bake at 400° for 45 to 50 minutes until knife inserted near center comes out clean.

    Cool and refrigerate.
