- 1 doz. quail
- 1 c. mushrooms
- 1 c. bread crumbs
- 1/4 stick butter
- 1 tsp. salt
- 1/4 tsp. cayenne
- 1 tsp. minced parsley
- 1 Tbsp. oil
- 1 Tbsp. flour
- 2 1/4 c. chicken broth
- 1 tsp. minced green onions
Directions

1Season quail inside and out.

2Combine mushrooms, bread crumbs, salt and pepper; saute in butter.

3Stuff quail with this mixture. Make roux by browning flour in oil.

4Add stock, onions and parsley to roux and cook a few minutes.

5Place quail in baking pan and pour sauce over quail.

6Bake at 325° for 45 minutes or until tender, basting frequently.
